Dispite the hypothetical claim that suggests the molecular structure of Omega 3 is altered when using heat to extract the Fish Oil from the Fish, it is untrue because even if this was happening, the human cell would reassimilate the compound through metabolism.
Fish & heavy metal toxicity
The FDA has conducted studies that found that the top 30+ most popular brands of Fish Oil tested significantly low for levels of heavy metals. This is because these companies use molecular distillation processes that filter out these heavy metals(i.e. Mercury). This is different from eating fish itself because there's no way to take out the metal from the whole fish in tact. The smaller the fish, the less chance it will contain heavy metal, or the less heavy metal it will contain.
Fish Contaminants
Pollutants that contaminate Fish, i.e. PCBs and Mercury, are mainly manifested in Bigger(predatory) fish, such as Swordfish, and Albacore Tuna. I suggest limiting your consumption of these types of fish. Remember, the smaller the fish, the lower the risk for heavy metals, and contaminants. Examples of small fish are Mackerel and Anchovies. Ultimately, I recommend to take fish oil supplements and/or eat fish as frequently as you can. To balance out the potential consumption of adverse compounds, you should consume extra antioxidants, such as Green tea, Black tea, Berries, Red wine, Cacao(found in organic dark chocolate) tomatos(especially sun-dried), Prunes, and many other fruits and vegetables. In addition, I recommend the following compound:
N-AcetylCysteine - This is an Antioxidant/heavy metal detoxifier, which can be found in supplemental capsule form.
Basic Omega 3 conversions(R=Ratio): ALA(R=15%)> EPA(R=5%)> DHA
This means that for every 100 mg of ALA you consume, it is being coverted into 15 mg of EPA, and so on. This being said, Fish Oil is a direct way to get your DHA
I have came to the personal conclusion that the minimal amount of EPA an adult should consume a day is 350 mg of EPA, and 200 mg of DHA. The only way to completely avoid the risk of consuming contaminants, is to seek out the Vegetarian alternative for DHA, which is Algae derived Oil. This is an organic oil blend from Algae that has been cultivated by Biotech labs, such as Martek Biosciences Corp., who also make products to mix into beverages, including baby formula.

GLA(Gamma linolenic Acid) is a great compound for Inflammatory conditions, and SKIN health. It is found at one of the highest concentrations in BORAGE OIL. If you have Arthritis, or a dry skin condition, it may treat these conditions. Borage Oil is about 24% GLA on average.
